Egg Fried Rice
This is perfect with sweet and sour chicken, or satay chicken. The sesame oil is not used to cook anything, it is a seasoning and gives a wonderfully authentic chinese taste to the rice.
Equipment
- Wok or Frying Pan
Ingredients
- 450 g rice cooked and cooled
- 3 tbsp oil
- 2 eggs beaten
- 1 tbsp soy sauce
- 60 g peas
- sesame oil
- 2 spring onions thinly sliced
- salt and pepper
Instructions
- Heat the wok or frying pan and add the oil, pour in the egg and soy sauce and cook until just starting to set.
- Add the rice and peas, and stir. Cook for 3 minutes, stirring all the while.
- Add a dash of sesame oil, test the seasoning and add salt and pepper if required, stir and serve.
