Egg Fried Rice

This is perfect with sweet and sour chicken, or satay chicken. The sesame oil is not used to cook anything, it is a seasoning and gives a wonderfully authentic chinese taste to the rice.

Equipment

  • Wok or Frying Pan

Ingredients
  

  • 450 g rice cooked and cooled
  • 3 tbsp oil
  • 2 eggs beaten
  • 1 tbsp soy sauce
  • 60 g peas
  • sesame oil
  • 2 spring onions thinly sliced
  • salt and pepper

Instructions
 

  • Heat the wok or frying pan and add the oil, pour in the egg and soy sauce and cook until just starting to set.
  • Add the rice and peas, and stir. Cook for 3 minutes, stirring all the while.
  • Add a dash of sesame oil, test the seasoning and add salt and pepper if required, stir and serve.
