Egg Fried Rice
This is perfect with sweet and sour chicken, or satay chicken. The sesame oil is not used to cook anything, it is a seasoning and gives a wonderfully authentic chinese taste to the rice.

- 450 g rice cooked and cooled
- 3 tbsp oil
- 2 eggs beaten
- 1 tbsp soy sauce
- 60 g peas
- sesame oil
- 2 spring onions thinly sliced
- salt and pepper
Heat the wok or frying pan and add the oil, pour in the egg and soy sauce and cook until just starting to set.
Add the rice and peas, and stir. Cook for 3 minutes, stirring all the while.
Add a dash of sesame oil, test the seasoning and add salt and pepper if required, stir and serve.
